Eggplant Curry

eggplant curry

Ingredients

  • 3 eggplants, cut into fried
  • 2 cm of crushed galangal
  • 1 stalk lemongrass crushed
  • 2 lime leaves
  • 1 pack of coconut milk
  • 1 teaspoon curry powder
  • salt
  • sugar

Ground spices

  • 4 red onions
  • 2 cloves of garlic
  • 2 hazelnuts
  • 2 cm turmeric
  • 1/2 teaspoon coriander.

Method

  • 1. Saute ground spices, galangal, lemon grass, lime leaves, curry powder until fragrant. Add water. Stir until boiling. Add eggplant. Bring back to a boil
  • 2. Pour coconut milk. Cook until boiling.
  • 3. Add salt and sugar. Taste correction.
  • 4. Serve.
