Petai Shrimp Sambal

Ingredients

  • 500 gr prawns (peeled clean leaving the tail)
  • 2-3 petai/pete boards
  • 10 pcs quail eggs (optional)
  • 10-15 pcs curly red chili (if you want it spicy, you can mix it with cayenne)
  • 1 pc red tomato (choose a bit small)
  • 10 cloves of red onion
  • 5 cloves of garlic
  • 1 tbsp brown sugar
  • Salt, sugar and powdered broth to taste
  • Fried myk to taste

Method

  • Boil quail eggs, peel and fry in hot oil, set aside
  • Finely blend the chilies, onions and tomatoes, you can add a little water or use oil, set aside, if you want the spices to be a bit rough, you can puree it using a chopper, no need to add water if you use a chopper
  • Saute the ground spices until fragrant with a little more oil, saute until slightly dry, oil and fragrant, add shrimp and petai, season with salt, sugar and powdered stock, stir-fry until prawns are cooked, don't take too long or the prawns will be hard, taste test if it's right, turn off the heat ready to be served
