Serani Pindang Ingredients
- -/ 1 kg red snapper, cut into pieces & wash clean
- 1 lime
- 1 cup full of basil leaves
- 2 lemongrass stalks, crushed
- 2 bay leaves
- 2 lime leaves
- 1 red tomato, cut into 8 parts
- 3 green tomatoes, cut into 2
- 3 star fruit wuluh, split 2
- 7 cloves of red onion, thinly sliced
- 4 cloves of garlic, thinly sliced
- 10 whole chilies
- 3 pieces of curly red chili, sliced oblique
- 2 fingers of ginger, grilled & crushed
- 1 finger galangal, geprek
- 1 knuckle of turmeric, grilled & crushed
- Salt, sugar & powdered mushroom broth, to taste
- 5 tbsp cooking oil
- 1 liter of water
How to Make Pindang Serani
- 1. Coat the fish with lime juice, let stand 15 minutes then wash thoroughly.
- 2. Heat the oil, saute the onions until fragrant. Add red chilies, lime leaves, bay leaves, lemon grass, ginger, galangal & turmeric, stir-fry again until fragrant.
- 3. Add water & whole cayenne pepper, cook until the water boils & the chili wilts.
- 4. Add fish, star fruit & seasoning. Cook until the spices absorb.
- 5. Finally add the tomatoes & basil leaves, mix well.
- 6. Correct taste & serve.
