What are Lamongan Mixed Tofu Seasonings?

Mixed tofu from East Java is made from several ingredients, namely fried tofu, cassava cakes, beef, noodles, long bean sprouts, and lettuce.

Where Does Mixed Tofu Come From?

Mixed tofu is a spicy spiced dish originating from Lamongan. but you can find this dish easily in several other areas in East Java, such as Surabaya and Sidoarjo.

Ingredient

  • 500 gr minced meat
  • 2 lbs bay leaf
  • 5 lbs lime leaves
  • 2 stalks Lemongrass, geprek
  • 3 cm Lao, geprek
  • enough water to boil the meat

Ground spices

  • 15 btr Garlic
  • 8 pcs Shallots
  • 1/2 tbsp coriander powder @taninspices.id
  • 1 tsp ground pepper @taninspices.id
  • 2 cm Kencur
  • 1 tsp Ginger powder @taninspices.id
  • 1 tsp turmeric powder @taninspices.id
  • 1/2 tsp cumin powder @taninspices.id
  • 1 tbsp Petis
  • to taste Salt & Brown Sugar

petis

  • 100 gr Petis Good quality
  • 2 tbsp Fried Garlic
  • 1 tsp Sugar
  • 250 ml Water
  • Puree fried onions
  • Mix the petis, fried onions, sugar & water
  • Boil until the paste thickens, remove from heat. set aside

Chilli sauce

  • Puree boiled cayenne pepper
  • Salt

Complementary

  • Yellow Noodles
  • Lettuce
  • Brewed bean sprouts
  • Fried tofu
  • Shrimp crisp

Method

  • Boil the water until it boils, add the meat, stir & leave for a while until the meat changes color. Remove the meat, slice according to taste.
  • Saute ground spices until fragrant, add brown sugar, salt, lime leaves, bay leaf, lemongrass & laos, stir well, cook until the spices are cooked.
  • •Masukkan irisan daging ke dlm bumbu dgn ditambah sedikit air. Aduk hingga rata & biarkan bumbu meresap dalam daging.
  • •Masukkan daging yg sudah berbumbu ke dalam kaldu daging yang di didihkan tadi. Aduk. Kecilkan api, biarkan daging empuk & meresap bumbunya..

Penyajian

  • •Ambil 1 sdt petis & sambal (sesuai selera), aduk diatas mangkok saji
  • •Beri mie kuning rebus, tahu, tambahkan irisan selada & tauge.
  • •Terakhir, siram dengan kuah panas berserta dagingnya.
