Ingredient

  • 3 eggs, scrambled
  • 130 ml instant coconut milk
  • 150ml water
  • 1 tsp salt
  • 1 tsp mushroom stock
  • 1 tsp sugar
  • 1 tbsp lime juice
  • 2 plantains, peeled
  • 2 lime leaves

Ground spices

  • 150gr green chili
  • 50gr green cayenne
  • 8 red onions
  • 5 garlic
  • 3 green tomatoes

Complementary

  • Fried anchovies
  • Boiled cassava leaves

How to cook

  • • Heat the oil, scramble the eggs, cook until cooked, remove and set aside.
  • • Heat the oil, stir-fry the ground spices and lime leaves until cooked, add the bananas, stir briefly, pour the coconut milk, water, cook on low heat until it boils. Lift.
  • • Arrange in a bowl:
  • Scrambled eggs, pour the spicy coconut milk sauce and take the banana, sprinkle with fried anchovies. Serve with boiled cassava leaves.
