Pecan Chili Ingredients

  • 2 small tomatoes
  • 20 red onions
  • 5 cloves of garlic
  • 6 hazelnuts
  • 15 curly chilies
  • 25 cayenne pepper (adjust to taste)
  • 2.5 tsp salt
  • 1 tsp brown sugar (can be substituted with granulated sugar)
  • 1/2 tsp mushroom stock
  • 1 tsp shrimp paste
  • 1 key orange

How to make Kemiri Sambal

  • 1. Heat the oil, fry the onions, candlenuts, chilies and tomatoes until wilted. Remove and strain.
  • 2. Add grilled shrimp paste, puree all the ingredients that have been fried.
  • 3. Reheat the remaining cooking oil, cook the chili sauce until it smells good and doesn't smell bad. Add salt, mushroom broth and brown sugar, taste correction.
  • 4. If the chili sauce has turned an older color and the oil appears to be separated from the spices, pour in the key lime juice, stir briefly. Lift.
