Ingredient

  • 1 pc eggplant
  • 100 gr minced meat
  • 50 gr chopped prawns
  • Salt, pepper, sugar and seasoning to taste
  • Corn flour to taste
  • 2 cloves of garlic finely
  • Enough water
  • 1 pc onion
  • 1/2 red bell pepper
  • 1/2 pc green bell pepper
  • enough cornstarch solution
  • Sliced ​​onions

Flour Dough

  • 2 eggs
  • 2 tbsp all-purpose flour
  • 1/2 tsp rice flour

Sauce

  • 1 tbsp oyster sauce
  • 1 tbsp tomato sauce
  • 1 tbsp chili sauce
  • 1 tbsp plum sauce
  • 1/2 tbsp powdered sugar

Method

  • Prepare a bowl, add the minced meat and minced prawns, add salt, pepper, sugar and seasoning to taste, mix well, add the cornstarch, mix well, and let it rest for 15 minutes.
  • Clean the eggplant, cut the eggplant in half, don't break the eggplant, soak it in vinegar for a while, remove the cloth to dry.
  • Fill the eggplant with the meat mixture that has been seasoned earlier.
  • Mix all the flour mixture mix well.
  • Dip the stuffed eggplant into the flour mixture then fry it in hot oil and plenty of it until the eggplant is submerged.
  • Fry over low heat until crispy and crispy, remove from heat.
  • Heat a frying pan with a little oil, saute finely chopped garlic and onions until fragrant, add enough water.
  • Add all the sauce and cornstarch solution and cook until slightly thickened.
  • Enter the paprika, stir well, pour over the fried eggplant, sprinkle with spring onions.

  • Note: if you're afraid the eggplant won't be crispy, pour the sauce onto the plate first and then put the fried eggplant on top of the sauce
