2 large red chilies, seeds removed & finely chopped
7 whole red chilies
2 bay leaves
2 lime leaves
1 lemongrass stalk, crushed
1 finger galangal, geprek
1/2 small size brown sugar
Salt & mushroom broth, to taste
How to make
1. Heat oil, saute ground spices until fragrant. Then add chopped chilies, bay leaves, lime leaves, lemongrass & galangal, stir-fry again until fragrant.
2. Enter the meat, stir until it changes color then add water. Cook over low heat for 30 minutes.
3. Enter the krecek, cayenne pepper & seasoning. Cook until the crackles wilt & the spices absorb.
4. Enter the coconut milk, cook until boiling.
5. Taste correction, serve with a sprinkling of fried onions.
