Spicy Chicken Sauce Ingredients

  • 1⁄2 free-range chicken, cut according to taste

Spice

  • 12 cloves of red onion
  • 5 cloves of garlic
  • 100 gr red chili
  • 30 g red curly chili
  • 2 rs ginger, roasted
  • 1 rs turmeric, roasted
  • 1 tbsp coriander, roasted
  • 2-3 candlenuts, roasted

Other Seasonings

  • 1 tbsp salt
  • 1 tbsp chicken stock
  • 1 1⁄2 tbsp sugar
  • 1⁄2 tbsp pepper powder
  • 4 bay leaves
  • 5 lime leaves
  • 3 stalks lemongrass, crushed
  • 3 rs of galangal, geprek
  • Note: the amount of seasoning is adjusted according to the number of ingredients used

How to make spicy chicken broth

  • 1. Roast spices such as candlenut, coriander, ginger, turmeric, then puree with onions and chilies
  • 2. Put the spices into the pan, add the lime leaves, bay leaf, galangal and lemongrass (I ran out, so I skipped)
  • 3. Add enough water (I used about 1 liter at the beginning) mix well and bring to a boil
  • 4. After boiling, add the chicken pieces
  • 5. Cook until the chicken is tender, if not tender, add more water (don't forget to adjust the taste by adding salt or sugar). After cooking for a long time, the chicken will release the oil by itself.
  • 6. After the chicken is tender and the taste correction is okay, the spicy chicken broth is ready to be served with hot rice
