Tempe Eggplant Balado

Ingredient

  • 2 purple eggplants
  • 1 tempeh board, coarsely mashed
  • 1 bay leaf
  • 2 lime leaves
  • Salt to taste
  • Brown sugar to taste
  • Cooking oil

Ground spices

  • 4 cloves of red onion
  • 4 cloves garlic
  • 10 pieces of red chili
  • A little shrimp paste

How to make

  • 1. Cut the eggplant, then fry until wilted, remove & drain.
  • 2. Saute ground spices until cooked, add a little water, add salt, brown sugar, bay leaf & lime leaves, stir. Add the tempeh, stir & cook until the tempeh is cooked and the water has slightly reduced. Add the eggplant, stir briefly then remove.
