1. Cut the eggplant, then fry until wilted, remove & drain.
2. Saute ground spices until cooked, add a little water, add salt, brown sugar, bay leaf & lime leaves, stir. Add the tempeh, stir & cook until the tempeh is cooked and the water has slightly reduced. Add the eggplant, stir briefly then remove.
