Every person should know how to cook, and especially how to cook safely. Everyone has different dietary restrictions, so no one should be afraid to experiment with different recipes, and find the ones that suit them best. There are a few basic ingredients that are always needed in recipes: water, oil, salt, and pepper. Other ingredients, like herbs and spices, can be used to add flavor and also to provide health benefits.
1. Clean the catfish, wash with running water. Sprinkle with lime juice. Let stand for 15 minutes, rinse. Coat with ground spices until evenly distributed, let stand for 30 minutes (so that the spices absorb)
2. Heat enough cooking oil (until all the catfish are submerged in oil), fry the catfish until golden brown. Lift & drain
1. Heat cooking oil, add curly red chilies, cayenne pepper, shallots, garlic and tomatoes, fry until golden brown. Lift & drain
2. Finely grind the fried chili ingredients together with the shrimp paste, salt, sugar and mushroom broth. Add enough hot cooking oil (the remaining oil frying the catfish), mix well.
Serving: fried catfish on top of the shrimp paste, then squeeze/press using a pestle. Add the complement and immediately serve with warm rice.
