Fried Catfish Ingredients

  • 1/2 kg Catfish (6 pcs)
  • 1 tbsp Lime Juice
  • The oil for frying

Ground spices

  • 6 cloves of garlic
  • 1 tsp Coriander
  • 2 cm Turmeric
  • Salt to taste

How to make

  • 1. Clean the catfish, wash with running water. Sprinkle with lime juice. Let stand for 15 minutes, rinse. Coat with ground spices until evenly distributed, let stand for 30 minutes (so that the spices absorb)
  • 2. Heat enough cooking oil (until all the catfish are submerged in oil), fry the catfish until golden brown. Lift & drain
  • 1. Heat cooking oil, add curly red chilies, cayenne pepper, shallots, garlic and tomatoes, fry until golden brown. Lift & drain
  • 2. Finely grind the fried chili ingredients together with the shrimp paste, salt, sugar and mushroom broth. Add enough hot cooking oil (the remaining oil frying the catfish), mix well.
  • Serving: fried catfish on top of the shrimp paste, then squeeze/press using a pestle. Add the complement and immediately serve with warm rice.

Terasi Sambal Ingredients

  • 6 pcs curly red chili, cut into 2
  • 5 pcs Cayenne Pepper (adjust to taste)
  • 5 pcs Shallots
  • 1 clove of Garlic
  • 2 pcs Tomato
  • 1 tsp grilled shrimp paste
  • Salt, Sugar and Mushroom Broth to taste

Complementary

  • Fried tofu
  • Fried tempe
  • Lalapan (adjust to taste)
