Belacan Seasoned Chicken

Ingredients

  • 1/2 broiler chicken (about 700gr), cut into pieces according to taste, mix with the juice of 1 key orange
  • 2 tablespoons of tamarind solution (I used 1/2 tablespoon of tamarind paste)
  • 1 tsp salt
  • 1.5 tbsp brown sugar
  • 200 ml water
  • 2 lbs whole lime leaves (form 8)

Refined Material

  • 7 red onions
  • 3 cloves of garlic
  • 3 big red chilies
  • 7 curly red chilies (you can add more if you want it spicier)
  • 2 tbsp grilled shrimp paste

How to make

  • 1. Heat enough oil. Fry the chicken until it turns white. It doesn't need to be brown. Lift and drain.
  • 2. Saute ground spices and lime leaves until fragrant and slightly dry, add chicken, stir, pour water and tamarind water solution/sour paste, stir until boiling. Add brown sugar and salt, mix well. Cook until the water reduces and thickens, adjust the taste.
  • 3. Remove and serve.
