Using puff pastry allows me to just cut up my pastry and throw it right into the fryer! it doesn't get much easier than that! it even works best if the pastry is frozen. so, for mardi gras or fat tuesday (in italy we call it carnevale), you will find lots of different types of fried dough.

Can I Fry Store Bought Puff Pastry?

Absolutely, yes! in fact, if you're in for a busy week with little pockets of time in between, you can do everything ahead of time. that goes for the curried chicken and potato filling, as well as the pastry dough. you can even fill and shape the puffs, and freeze these ready-made puffs for later frying.

How Do You Make Chicken Curry Puff?

What Is Chicken En Croute?

Chicken en croute, chicken breast sat on a slice of ham & mushroom duxelles before being encased in puff pastry served with a mushroom sauce. using a lattice of puff pastry over the top of the chicken lightens the dish significantly. it also makes checking that the chicken breast is perfectly cooked much easier.

Ingredients

  • -250gr chicken fillet (I use thighs), coarsely chopped
  • -2 hard-boiled eggs, split each into 6 parts, a total of 12
  • -2 medium sized potatoes, peeled and cut into small dice
  • -1 carrot, peeled and cut into matchsticks
  • -1/2 celery stalks (I substituted 1 tsp dry parsley)
  • -1 sachet of Maestro Mayonnaise 100gr @maestromayonais
  • -3 sheets of puff pastry (original recipe uses spring roll skin)
  • -1/4 tsp ground pepper
  • -1/4 tsp cumin (I skipped)
  • -3 cloves of garlic
  • -2 red onions
  • -1 tbsp butter (my addition)
  • -1 tbsp cooking oil
  • -Salt to taste (I used 1 tsp)
  • -Sufficient hot water
  • Spread: 1 egg yolk with a pinch of salt
  • Topping: dry parsley

How to make

  • 1. Puree the onion and garlic along with salt and pepper
  • 2. Heat oil and butter, saute ground spices until fragrant, add carrots and potatoes, cook until wilted, add chopped chicken, cook until it changes color, add dry celery/parsley, mix well, add hot water until submerged, cook until cooked and the water dries up, turn off the stove and set aside
  • 3. Slice the puff pastry size 10×7cm, so 24
  • 4. Roll out the puff pastry, add the filling, eggs and Mastro Mayonnaise @maestromayonais, cover with puff pastry, glue the edges with a fork, place on a baking sheet that has been smeared with margarine/lined with baking paper, brush with egg yolk, sprinkle with dry parsley
  • 5. Bake in a preheated oven at 190C for 25 minutes/adjust according to your oven.
  • 6. Remove and serve.
