Eker & Spicy Chicken Wings

eker & spicy chicken wings

Ingredient

  • 1/4 kg chicken feet
  • 5 pieces of chicken wings below
  • 2 lbs lime leaves
  • 2 bay leaves
  • 400 ml water
  • 2 chopped tomatoes
  • 1 tbsp sweet soy sauce
  • 1 tablespoon sugar (me: brown sugar)
  • To taste mushroom broth, salt & pepper powder

Ground spices

  • 4 pieces of curly red chili
  • 10 pieces of cayenne pepper (adjust to taste)
  • 4 cloves bawput
  • 5 grains bawmer
  • 1 sachet of instant shrimp paste (optional)

How to cook

  • Clean the chicken claws, remove the nails, cut the claws into 2 parts (I like to be horrified when I see the claws that are intact and immediately cooked) this way the claws become soft easily, wash clean, boil the claws until soft, wash again, drain, set aside
  • Saute ground spices, lime leaves & salam until fragrant, add chicken wings & boiled claws, mix well
  • Add water, then season with other spices, mix well
  • Cook until it boils and the water shrinks a bit, then add the chopped tomatoes, cook again until the water shrinks and is cooked, adjust the taste, turn off the stove, remove and serve
