medan teri balado

Ingredient

  • 500 gr field anchovies
  • 250 gr peanuts
  • 2 lime leaves
  • Sufficient stock powder and sugar
  • Enough cooking oil

Ground spices

  • 15 curly red chilies
  • 10 red chilies
  • 8 cloves of red onion
  • 4 cloves garlic
  • 1 tomato

The method

  • 1. Wash the anchovies with water then drain, dry fry, set aside
  • 2. Fry peanuts until cooked, set aside
  • 3. Heat oil, saute ground spices and lime leaves until fragrant, add sugar and powdered stock and cook until the sauce is cooked. Correct the taste, turn off the heat and let the sambal cool down completely.
  • 4. After the chili is cold (room temperature), add the peanuts and anchovies then mix well. I do this process to keep the beans crisp.
  • 5. Ready to serve
