Ingredients for Squid Cooked Basil Sauce

  • 1⁄4 kg squid, cleaned and cut into pieces
  • 1 -2 tbsp koji amino by @_koh.jie
  • 1 handful of basil

Ground spices

  • 2 Spring onions
  • 2 cloves of garlic
  • 7 pcs cayenne pepper
  • 3 pcs red curly chili

Other Seasonings

  • 2 rs of galangal
  • 1 stalk lemongrass, crushed
  • 2 lbs lime leaves
  • 1⁄2 tsp salt
  • 1 tsp sugar
  • 1⁄2 tsp mushroom stock
  • 1 tsp oyster sauce
  • Sweet soy sauce to taste
  • Note: the amount of seasoning is adjusted according to the number of ingredients used

How to Make Squid Cooked with Basil Sauce

  • 1. Wash the squid and marinate it with koji amino (if you don't have it, you can use lime)
  • 2. Puree all the spices.
  • 3. Sauté with enough oil, add galangal, lemongrass, lime leaves
  • 4. Stir well and stir fry until the spices are cooked
  • 5. After the spices are cooked and cooked, add the squid, seasoned with sugar, salt, powdered broth, oyster sauce and add sweet soy sauce to taste, then mix well
  • 6. Correct the taste and if the taste is right, turn off the stove, add the basil leaves and mix well
  • 7. Squid is ready to be served
