Ungkep Soy Sauce Duck Ingredients

  • 1 small duck (after removing the head and legs remaining 650 gr)
  • 4 cloves of garlic (crushed)
  • 1 pc of flower
  • 2 tbsp oyster sauce
  • 3 tbsp sweet soy sauce
  • 3 tbsp soy sauce
  • 25 g brown sugar
  • 1/4 tsp pepper
  • (if it's not salty or sweet, you can add more salt and sugar)

Fine Seasoning (Blender)

  • 6 cloves of garlic
  • 4 cloves of red onion
  • 1 tbsp tauco
  • 1 cm ginger
  • 2 cm galangal
  • 1 lemongrass stalk (just take the white)

How to Make Ungkep Soy Sauce Duck

  • Clean the duck pot according to taste, coat it with lime, let it sit for a while to get rid of the fishy smell, then wash it clean
  • Sauté ground spices, geprek pth onion and star anise with oil until fragrant, add duck, stir well, add soy sauce, oyster sauce, sugar, pepper, stir fry for a while
  • Add water, ungkep until the duck is tender (approximately 2 hours) and the water has shrunk a little, ready to be served
