Ingredients

  • 1 chicken
  • 1000ml water
  • 100 ml thick instant coconut milk
  • 3 bay leaves
  • 5 lime leaves
  • 2 lemongrass stalks, crushed
  • 1 segment of galangal, geprek
  • Mushroom broth
  • Salt
  • Sugar

Ground spices

  • 12 cloves of red onion
  • 8 cloves of garlic
  • 4 pecans, roasted
  • 1 tsp cumin
  • 1 tsp pepper powder
  • 1 tsp coriander, roasted
  • 1 segment of turmeric, burn

How to make

  • clean the chicken, cut according to taste
  • stir-fry ground spices, add bay leaves, lime leaves, lemongrass and galangal. Stir well. Cook until fragrant and the leaves change color.
  • add the chicken, stir until blended with the spices. Add water, mushroom broth, salt and sugar, cook until boiling.
  • Pour thick coconut milk, cook while stirring. Reduce the heat, cook until the chicken is tender (can be pressed briefly for 15 minutes). Taste correction. Lift and serve.
