Saute Spicy Scallop Dara
Spicy Sauteed Dara Scallops
- 300 gr peeled scallops
- 1 lime
- Petai, peeled
- 1 piece of ginger
- 2 cloves of garlic, crushed
- 1 lemongrass, crushed
- 3 lime leaves
- 1/2 clove of onion, sliced
- 3 cloves of garlic, sliced
- 1 segment of galangal, geprek
- 4 red curly chilies, sliced
- 3 green chilies, sliced
- 3 pieces of cayenne pepper, sliced
- 2 tbsp oyster sauce
- 2 tbsp sweet soy sauce
- Salt, pepper and mushroom broth to taste
- 100 ml water
- Oil for frying
How to Make Spicy Sauteed Clams Dara
- 1. Coat the scallops with lime juice and 1 tsp salt. Let stand 15 minutes and wash again.
- 2. Boil water, add crushed garlic and ginger. Cook until boiling. Add the scallops. Cook for up to 5 minutes. (to get rid of the fishy smell)
- 3. Sauté the onions, garlic, galangal, lemongrass and lime leaves and cook until the spices are fragrant, add the sliced red chilies, green chilies and cayenne pepper.
- 4. Put in the clams with oyster sauce and sweet soy sauce. Add salt, pepper and mushroom broth, mix well. Pour in the water. Stir well. Cook until the water is reduced and cooked. Add the banana, mix well and cook for a while. Turn off the fire.
- 5. Ready to serve
