Spicy Squid Fried Sambal

Ingredient

  • 150 gr salted squid
  • 4 plantains

Seasoning Iris

  • 6 cloves of red onion
  • 4 cloves garlic
  • 13 pcs cayenne pepper (adjust)
  • 8 pcs red curly chili

Other Seasonings

  • 4 rs of galangal, geprek
  • 1 stalk lemongrass, crushed
  • 3 lbs lime leaves, torn
  • 1 tsp mushroom stock
  • tbsp sugar
  • tsp salt
  • tsp ground pepper

Method

  • 1. Soak the salted squid in hot water, let stand 5-10 minutes, then drain
  • 2. Puree all the spices, then put it in a frying pan with hot oil
  • 3. Enter the galangal, lemongrass and lime leaves then stir-fry until fragrant and cooked
  • 4. Add sugar, ground pepper and broth powder.
  • Note: You can add salt to make the seasoning even more delicious, but be careful when adding it, because sometimes there is salted squid which even though it's soaked is still salty, it's best to add salt at the end after the salted squid enters.
  • 5. Enter the salted squid that has been drained and mix well again
  • 6. Enter the 4 plantains that have been peeled from the skin, mix well
  • 7. Soon it will be lifted, correct the taste again and it's ready to be served
