1. Mix all the marinade ingredients, then rub it all over the surface of the fish until evenly distributed, then let it sit for at least 1 hour to absorb
2. Roll the dori fillets into the egg mixture, then roll them in dry flour (all-purpose flour) until evenly distributed in all parts. Do this up to 2 times while pinching so that the flour is curly
3. Fry the fish in hot oil until dry and cooked. Remove and drain
3. Steak Sauce:
Heat the oil, sauté the garlic until fragrant and yellowish.. then add the mushrooms and fry until wilted.. After that, add the water and add all the spices (except cornstarch)
stir well
4. Check the taste, if it's just right.. add the cornstarch solution.. stir well until it's thick according to taste
5. Serve the dory fish with the sauce and side dish
